Prepared under the Lebensmittelgesetz (LMG) and Lebensmittel- und Gebrauchsgegenständeverordnung (LGV) — every food business in Switzerland must operate a documented self-control system (Selbstkontrolle). This concept is benchmarked against the "Leitlinie Gute Verfahrenspraxis im Gastgewerbe" (GVG), a hygiene guideline published by GastroSuisse and approved by the Federal Food Safety and Veterinary Office (Bundesamt für Lebensmittelsicherheit und Veterinärwesen "BLV").
